Short answer
Who owns the work, and how it is handed over
You do.
The written menu is yours to use with or without me. For anything I build, what you own, which licences you hold and how it is handed over are written down before that item starts. Handover is part of the item: the people who will run it are trained, the setup is written down in plain language, and someone on your side can change it without me.
If you stop working with me, nothing I built stops working. There is no hosting I control, no licence that runs through me and no fee for leaving it in place. What you can choose after the assessment is on what happens after.
